Super Quick Ice Cream Cake & Punch Recipes


My kids work hard in our little school.  They work so hard, in fact, that I think they deserve a little reward at the end of the year.  Reward, in Kid Language, translates to PARTY!  For our Year-End Party, I usually buy some summer worthy gifts and put them in gift bags, made kid food, and plan an activity.  This year, I told them they had to make their summer uniforms for their activity.  We tie-dyed shirts.  ;)

They didn't seem to mind.

And now for the recipes:

Super-Quick Ice Cream Cake
This is sooo good.  Everyone I have ever served it to has loved it.  It's also very versatile.  You can really use any flavors you want and make it totally different every time.  And did I mention it's quick?  You can have this made in 5 minutes flat.

12 Ice cream bars (I used Klondike Heath Bars, but we have also used cookies & cream, sandwich bars, etc.  If you need more cake, just use more bars.  Less cake?  Less bars.  I told you this was versatile.)
1 large tub Cool Whip
1-2 Candy Bars (I used Heath Bars, this time.  Often I will let the kids pick out their favorite)
Hersey's Chocolate Syrup
Caramel Syrup
(Even the syrups can be changed to go with your other choices.)

Put half your ice cream bars in a layer in a pan.  Spread half the cool whip on top.  Place the other half of the ice cream bars on top of the cool whip layer.  Spread the rest of the cool whip over the top.  Chop the candy bars and sprinkle over the top.  (An easy way to break up most candy bars is to freeze them first.  Then you can just bang them on the counter to break them up.  It's also a great stress reliever to bang things loudly on the counter -- snicker.)  Next, just drizzle the syrups on top.  Couldn't be easier.  Pop the whole thing in the freezer to firm things up -- maybe an hour.  You could serve immediately, it will just be a little soft.  Or you can leave it overnight.  Or for several days.  This is a great make-ahead dessert for entertaining.  If you put it in the deep freeze, you might want to pull it out about 10 minutes before serving so it won't be too hard to cut.  Enjoy!

This is so simple and easy that you wouldn't believe it could actually taste good, but it does.

Sherbet flavor of choice
Ginger Ale
Oh, wait, that's it.

Just mix them together in a big bowl.  I have also served these like root-beer floats.  If you want to be pretty about it, scoop the sherbet into round balls, put them in the punch bowl and gently pour the Ginger Ale in.  If that is too easy for you, you could try standing on one foot while you make it.
